Pickled Peaches (Slightly More Printable Recipe)

1 lb peeled and quartered peaches
1 1/2 c white sugar
1 c vinegar
1 cinnamon stick
1/8 t ground cloves
1/2 t ground fresh ginger

1. Combine sugar, vinegar, cinnamon (in a spice pouch if you like), cloves and ginger in a medium saucepan. Heat until the sugar has dissolved.

2. Add peaches, heat to a boil.

3. Ladle into a large jar (quart or larger) and allow to cool. Refrigerate.
